The MBTA is Terrifying

It’s always interesting to see if I’ll actually make it home to cook food, or if i’ll be delayed for hours from my bus crashing into something en-route to my apartment.  Ah the glories of the MBTA, they’ll get you there…eventually.

Anywho…I was up against the clock tonight as Bill had to be in the North end by 8, so my time on the bus proved essential in planning our dinner.  Quick, easy, and delicious was the name of the game.

Upon returning home I quickly tenderized and sliced 5 thin pork chops into strips and threw them into a pot with half a white onion and some olive oil. As that slowly cooked I poured in about a glass of red wine to infuse some flavor.  As that simmered it allowed  the pork to cook through and the wine to be absorbed.  While the pork and onions simmered I prepped some instant mashed potatoes (listen, we’re not all perfect, and they are delicious, so don’t judge me), mixing in Parmesan cheese, and garlic powder for my own touch.

Believe me, it tastes much better than it looks.

All in all with prep and cook time it only took about 30 minutes to put together which worked out beautifully for Bill’s schedule.
