Not All of My Experiments are Bad!

Our thoughts go out to all those affected by the events in our city on Monday.  We’re strong, and we’ll get through this together.  With that being said let’s jump back  into the swing of things.

During the week I always utilize my ride home on the bus to plan out what I’ll be cooking.  That was tonight’s plan as well, but there was one problem, I was exhausted.  I started the ride off thinking about what to cook, but after the bus took its second unexpected detour my resistance proved futile.  The remainder of the trip was spent bobbing my head and leaning completely forward (yes like a crazy person on the subway that no one sits near) as I fell asleep and came to, repeatedly.  Apologies to the kind woman sitting next to me…

Regardless of me falling asleep on public transit I was able to make it back and start cooking.  Before I had passed out on the bus I thought of a creation I could try, so I continued forward with those plans.

After peeling and slicing 2 avocados in 1/2 in strips I coated them with egg then dropped them into a bowl with crushed corn flakes.  From there they were placed into a Pyrex dish, seasoned with salt and pepper, drizzled with lime juice and put in the oven at 450 for 25 minutes.

The result was a crunchy, almost fried texture and a warmer inside which was delicious.  This makes a great side for the burgers you read about a few weeks ago.  Look for this, along with a great dipping sauce in our upcoming eBook of Bill’s Favorite Recipes.
