The Thought of Being Healthy: Apple Arugula Salad

Being healthy and fit is awesome.  What’s even better though, is the thought of being healthy and fit, it just seems fantastic.  Now, don’t be confused, I’m neither of these, but I love the idea of them.  It’s that idea which led me to subscribe to both Men’s Health and GQ.  I figured if these kept arriving at my apartment I would not only read them, but also exercise and try a bunch of recipes they recommend.

This idea was all good and well, but my execution of it is, and has been…lacking.  Instead I have a poorly arranged stack of magazines growing in size and collecting dust with each passing day.  After months of staring at this stack I decided to dive in and read my way through.  I’m still not exercising like they recommend, but I did start making some of their recipes.

As seen in previous posts Bill loves to whine about salads and how I never make them.  My typical reaction is to not acknowledge him hoping that he either drops it, or gets distracted by a piece of dust or something to that extent floating by.  However, while reading Men’s Health I stumbled upon a recipe for an apple arugula salad that seemed delicious so I gave it a shot.

Apple Arugula Salad:

-Mix together the following ingredients

-Arugula

-1 apple cored and chopped.

-2 Tbsp of chopped walnuts, and crumbled blue cheese.

-1/4 tsp of minced garlic

-A dash of balsamic vinegar and olive oil.

Delicious, easy to make, and Bill is silenced.  It’s a culinary triple threat.
